This yummy, heartfelt meal, is very easy to prepare and I often use this recipe when I am stuck for time but want something warm and hearty. Full of fibre, complex carbohydrates and herbs. Very satisfying!
1 Tlbs of coconut oil
1 brown onion sliced
2 cloves garlic
1 tsp turmeric
1/2 tsp cinnamon
1/4 morrocan spice
1 cup vegetable stock
2 cups cooked chickpeas
1/2 cup sultana's
1 carrot, grated
In a pan fry coconut oil, onion and garlic, until cooked. Stir in all spices. Add chickpeas, stock, carrot and sultanas. Simmer 10mins. SERVE
